A Sicilian recipe from my father. I have always loved it, even as a kid. I hope you enjoy it too! It is full of colour, full of flavour and packed with nutrients. Ingredients 4 to 5 medium-small eggplants 2 Tbsp salt 3 Tbsp fresh chopped parsley, basil and oregano. (You can add a few drops of food grade essential oils too) 1/4 cup chopped different colour capsicums 3 to 4 cloves of garlic, minced 1 cup apple cider vinegar 1 to 2 cups of extra-virgin olive oil Directions Peel the eggplants, cut off the ends, and slice lengthwise to obtain long strips the size of skinny fries.
